Beef Orzo

Ingredients

    3 cups 99% fat free beef broth
    1.5 c uncooked orzo
    1 can (11oz) whole kernel corn
    1 can (4.5 oz) chopped green chiles
    .5 lb extra-lean beef for stir fry cut up
    1 lg bell pepper, cut into strips
    1/4 c chopped fresh cilantro

Directions

In 2Qt sauce pan mix broth, pasta, corn and chiles. Heat to boiling, reduce heat. Cover and simmer 10 mins or until pasta is tender. Let stand 5 mis or until almost all liquid is absorbed.
In a skillet add oil over med-high heat. Add beef and bell pepper, cook 5 mins until beef is browned.
Stir beef mixture into pasta mixture. Add cilantro.
