Introduction

April Asparagus Festival in Stockton, CA has a mascot SPEAR with a 5 k run called Spear It!

Run the race, then come home and fill up on a FRESH SPEAR SALAD!

Run the race, then come home and fill up on a FRESH SPEAR SALAD!

Number of Servings: 4

Ingredients

    8 medium SPEARS
    16 sugar snap pea pods
    1 small avacado
    5 scallions
    2 tbs. lemon juice
    3 tbs. olive oil
    3 tbs. Balsalmic vinegar
    2 tbs. feta cheese, grated

    Salt and pepper or Mrs Dash to taste
    Use radishes as garnish and SMILE!



Directions

Remove woody part of the spear stems
Cut spears in thirds. Steam spears and sugar snap pea pods with a bit of salt for about 5 minutes.

Plunge spears and pods into cold water to stop cooking. Pat dry place in a lovely crystal bowl.
Slice avocado into seperate bowl of bite size bits.
Slather bits with lemon juice.

Warm the spear/snaps in the oven with a drizzle of olive oil. Add sliced scallions and then mix into serving crystal bowl with all other lush parts.

Warm the salald dressing and swish amid the warm greens. Put avocado bits atop the warm veggies. Sprinkle with broken feta! Pour salad dressing over veggies and garnish with radish.
