Ingredients

    One 3.5 oz bag of Black Fungus (mu er)
    1/2 of a very large cucumber or 1 small one
    2 chicken thighs (trimmed)
    1 tbsp. crushed red pepper
    2 tbsp. sea salt
    2 tbsp. worchestershire sauce
    3 tbsp. lite soy sauce
    2 tbsp. Kikkoman's Teriyaki Sauce
    1 tbsp. Canola Oil

Directions

In large pot, place mu-er in and cover completely with very hot (but not boiling) water. Let it soak for an hour completely on low heat. When done soaking, mu-er will have doubled in size. Rinse off the mu-er in cold water and place in large wok. Cut up the cucumber into 2" long strips and place in wok. Cut up the chicken into bite-sized pieces and place in wok. Add the rest of the ingredients and cook for 15 minutes on 350 degree heat in the wok. Enjoy with some white or green hot tea. Make sure to use chopsticks and maximize the Chinese effect.
