Healthy Chili Pasta Bake

Introduction

Ingredients

    16 oz. whole wheat penne pasta
    3- 15oz cans low fat Vegetarian chili
    1 can diced tomatoes, no salt added
    1 cup shredded carrots
    1 cup shredded zucchini
    3 cups shredded low fat cheddar cheese


Directions

1. Cook pasta in boiling water according to package directions, until just al dente.

2. Meanwhile, heat chili, tomatoes, zucchini, and carrots in a small saucepan.

3. Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with non-stick spray.

4. Spread 11/2 cups prepared chili over bottom of baking dish; layer one-third of cooked pasta over the chili. Sprinkle evenly with 3/4-cup cheddar cheese.

5. Repeat step 4 (using same amounts) to make 2 more complete layers. Top casserole with remaining chili and Jack cheese.

6. Bake 30 minutes or until hot and bubbly. Let stand 5 minutes and serve.
