Ingredients

5 cups baby spinach
2 cans drained & choped artichoke hearts
1 cup shredded parmesan cheese
2 tsp lemon zest
juice of 1 lemon
1/4 cup red wine vinegar
1 to 2 cloves garlic, crushed
2/3 cup extra virgin olive oil
Salt & pepper to taste
Directions
1) Combine lemon zest, lemon juice, garlic, and vinegar in a bowl and set aside for 5 minutes.
2) Toss spincach, and artichoke hearts in large salad bowl.
3) Whisk olive oil into lemon jucie mixture and pour over salad and toss to coast. Top salad with parmesan cheese.
