1 skinless chicken breast
1 small zucchini
1/2 cup of diced tomatoes
1/4 c breadcrumbs
1 tsp dijon mustard
1 tbsp cilantro
1/2 oz. white wine around edges of chicken.
Cut up 1 small zucchini into rounds and put on bottom of baking dish
Cover zucchini with 1/2 cup of diced tomatoes
In a small bowl combine 1/4 c breadcrumbs, 1 tsp dijon mustard and 1 tbsp cilantro.
Place chicken on top of zucchini/tomato mixture.
Press breadcrumb/mustard/cilantro mixture on top of chicken. Drizzle 1/2 oz. white wine around edges of chicken.
Bake 350 degrees for 1 hour
