Mini Fritata

Ingredients

    * 2 cups egg beaters
    * 1-1 1/2 cup shredded English Muffins (Wheat)
    * 1 1/2 cup skim milk
    * 1 cup shredded fat-freecheddar cheese
    * 1 pound turkey sausage
    * 1/2 cup chopped onion
    * 1/2 cup chopped Green bell Peppers
    * 1 tsp garlic/onion powder

Directions

Fry up sausage and some or all of the onions. Drain and pat dry.
Mix together eggs, milk, garlic, remaining onions, peppers and any other seasons you want.
Place bread in bottom of greased muffin tin. Cover with cheese and sausage. Pour milk and egg mixture over each cup serving.

Cover tin and set in refrigerator for at least one hour, but the longer the better. Overnight is good.

Cook at 375 for 30-45 minutes or until tooth pick comes out clean.
