Tony C's Chicken

Introduction

An easy and delicious way to spice up your chicken! An easy and delicious way to spice up your chicken!
Number of Servings: 6

Ingredients

    6 chicken breasts
    1 T Tony Chachere's creole seasoning
    1 1/2 cups water
    1/2 cup tomatoes, chopped
    1/3 cup parmesan cheese
    3 oz mozarella cheese

Directions

Thaw 6 chicken breasts and place in 13x9" baking pan. Mix creole seasoning into water and pour over chicken. Chop tomatoes and spread over chicken.

Bake at 350 for 20 minutes. Sprinkle parmesan cheese and mozarella cheese over chicken and bake for 10 more minutes or until chicken is done.

Makes 6 servings of 1 breast each.

This is not exactly a low-sodium recipe, given the creole seasoning, but Tony C's does make a lower sodium mix which would be just as great, I'm sure. Feel free to add more seasoning for a little more of a kick. The water poured over the chicken helps keep it moist and allows the seasoning to be absorbed into the meat very nicely. And the leftovers are great to be diluted and eaten as soup later.
