16 oz. of Chicken breast/tenders (No Skin)
2 slices (6 1/4" x 4" x 1/16") extra lean 5%
4 oz. Swiss Cheese
1 Tbsp Butter (salted)
1 Cup Chicken broth
1 fluid oz lemon juice
1 Tbsp of lemon zest
add ham and swiss cheese to each piece
(If using chicken tenders you will have aprox. 8 pieces.) roll up chicken from narrow end and secure with tooth picks.
Spray olive oil pam in pan and add 1 Tbsp of butter.
Brown chicken on all sides (aprox 8 minutes)
When chicken is brown add the chicken broth and lemon juice and lemon zest.
Bring to boil and then cover and simmer for 8 minutes.
Makes serving for 4
