Summer Veggies Vinaigrette

Introduction

This is fabulous in the summer with fresh tomatoes and cucumbers and either Vidalia or Texas Sweet onions This is fabulous in the summer with fresh tomatoes and cucumbers and either Vidalia or Texas Sweet onions
Number of Servings: 6

Ingredients

    Tomatoes, 1 cup, cut into chunks
    Cucumber w/peel, 1 cup, cut into chunks
    Onion, 1 cup, cut into chunks
    Extra-virgin Olive oil, 3 T
    Cider vinegar or wine vinegar, 3 T
    Seasoning mix (I use Morton's Nature Seasoning), to taste

Directions

Combine the chopped veggies in a shallow container, preferably one with a tight-fitting lid. Generously sprinkle seasoning onto the veggies; then add the oil and vinegar. Toss well and cover with lid. Let stand at least 15 minutes before serving, or store in refrigerator. The longer it stays in the fridge, the better it tastes. Makes about 6 1/2 cup servings, although I could easily eat the whole thing!
