Veal Scaloppini with Goat Cheese and Tomato Sauce

Ingredients

    -1lb veal cutlets*, pounded until thin
    -1 egg white
    -1/2 cup dry bread crumbs
    -1tbsp vegetable oil
    -2 tsp crushed garlic
    -1 cup tomato sauce
    -2 oz goat cheese
    -chopped fresh parsley

Directions

1. Dip veal in egg white, then in bread crumbs until coated.
2. In large non-stick skillet sprayed with non stick vegetable spray, heat oil' saute garlic for 1 minute. Add veal and cook until just tender and browned on both sides. Remove from heat.
3. Place tomato sauce in baking dish. Top with veal and sprinkle with goat cheese. Bake, uncovered for 5 minutes or until heated through. Garnish with parsley.

*You could always substitute the veal for chicken, or turkey scaloppini

    Thanks for posting! I added some parm to the breadcrumbs and topped it off with mozzarella instead since my husband doesn't like goat cheese. It was quick and delish! - 3/3/10

  • I made this 2 evenings ago.....incredible and so easy! (I tried to rate this a minute ago, but not sure if I did it correctly. This is my first time reviewing!) I used veal, herbed goat cheese and 2 large cans of Hunt's Garlic & Herb sauce to have lots sauce over pasta. This is a keeper. Thanks - 12/30/12
