Rosemary Garlic Potatoes

Introduction

My husband makes the best Potatoes and everyone asks for them. My husband makes the best Potatoes and everyone asks for them.
Number of Servings: 4

Ingredients

    Ingredients:

    Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.)
    Olive Oil, 1 tbsp
    Rosemary, 2 tbsp
    Garlic, 2 clove
    Parmesan cheese 2 Tbls
    black pepper to taste
    salt to taste

Directions

Cut Potatoes into large cubes or strips. We do large one inch cubes with the skin on. put in a bowl and drizzle the olive oil over it and mix with your hands until all is coated. Add chopped fresh rosemary (we grow it) 2 cloves chopped garlic, parmesan, salt and pepper. Put on baking sheet and bake at 400 degrees for 30 minutes or until golden brown.

  • I made this with some substitutions. I used garlic powder and left out the parmesan cheese. Instead of Rosemary I used Italian seasoning.
    It was very good and a good substitution for fried potatoes. - 7/12/08
