Smothered Chicken

Introduction

A simple chicken dish perfect for any diet! A simple chicken dish perfect for any diet!
Number of Servings: 4

Ingredients

    4 chicken breasts (boneless)
    1 can of low fat chicken broth (about 1.25 cup)
    1 cup chopped onion
    1 tbsp salt
    1tbsp pepper
    1/4 cup flour
    brocolli and/or mushrooms (optional)

Directions

Preheat oven to 350 degrees.
Brown chicken in a pan and set aside in casserole dish. Lightly brown onions in the same pan. When they become tender add chicken broth and sprinkle in the flour slowly stirring the whole time. Once the mixture has thickened slightly pour over chicken in dish. Put a lid on it and put it in the oven for 30-45 minutes or until chicken is cooked through. Eat over rice. You can add brocolli and/or mushrooms for added flavor and very few calories.
