3 cups cubed peeled cooked potatoes 3 hard-boiled eggs 3/4 cup diced celery 1/4 cup chopped onion
3/4 cup Miracle whip light 1 1/2 tsp cider vinegar (or 1 tsp white vinegar) 2 tsp yellow mustard 1/2 tsp sugar 1/4 tsp salt 1/4 tsp pepper
Paprika, if desired
Combine potatoes, 2 of the hard-boiled eggs (chopped), celery, and onions in a large bowl. In a small bowl, mix all remaining ingredients (except paprika & last egg), blend well. Spoon dressing over salad; mix well. Slice remaining egg for garnish, sprinkle with paprika if desired. Cover, refrigerate at least one hour or until well-chilled.
Very good potato salad. We don't eat a lot of potatoes in our house, but potato salad is one of the few things that, when we have it, it has to be just right. This is one recipe that meets expectations of 'just right'.
We really enjoyed this one. I used mayo w/ olive oil, balsamic vinegar, and celery salt instead of celery.... we aren't super found of celery. It's an important componet because it didn't tast right until I added a bit of celery flavor.
I ended up making it with 5+ cups of cubed potatoes (because that's how many I cooked!) but left all other ingredient amounts the same. I used a Vidalia onion which made it just a little bit sweeter than salads I've had in the past. DELICIOUS!!! Everyone loved it!!
