Stuffed Zucchini

Ingredients

    3/4 lb lean ground beef
    1/2 c. onion, chopped
    1 tsp garlic
    1 can rotel tomatoes
    1/2 c. brown rice
    2 oz. RF cheddar cheese
    3 zucchini
    1 TB worchestershire sauce
    1/2 tsp dried basil
    1/4 tsp salt
    1/4 tsp pepper

Directions

Wash zucchini. Halve lengthwise. Scoop out zucchini lengthwise. Immerse in boiling water for 5 min. Set aside to dry.

In skillet, cook meat, onion and garlic til done. Drain any fat. Stir in undrained tomatoes, uncooked rice, Worchestershire sauce, basil, 1/2 c. water, 1/4 tsp salt, 1/4 tsp pepper. Bring to boil. reduce heat. Cover, simmer for 15 min. til rice is tender. Stir in 1/4 c. cheese. Fill zucchini with meat mixture. Put on cookie sheet (covered w/ foil for easy clean up. Add any remaining meat mixture around zucc's. Bake at 375* for 15 min. Sprinkle w/ remaining cheese, and bake for another 3 min.

  • I enjoyed this. I used Morning Star Meal Starters Instead of Ground Beef, but thought the taste for the stuffing was good. I over coojed it, my fault and burnt the cheese, but all in all liked it. Well try it again! Thanks so much! Happy Day! Heart - 8/30/08
