Ingredients

2 Tablespoons Olive Oil
1 large onion, chopped
1/2 cup red wine
8 oz. tempeh, cut into 1/2 " thick slices
1 cup chopped carrots
2 cups chopped potatoes
1 cup green beans, cut into 1" pieces
One 14.5 oz. can diced tomatoes (drained)
2 cups vegetable broth
salt and pepper
1 tablespoon minced parsley
Directions
Heat 1 tablespoon of oil in large skillet over medium heat. Add the onion; cook until soft, about 5 mins. Add the wine and cook 1 minute. Set aside. In same skillet, heat remaining oil. Add tempeh slices; cook until browned, about 10 mins.
Heat broth in large pan while cooking onions and tempeh. Add onions, tempeh and other vegetables. Add salt and pepper to taste, stir well.
Bring to boil on stove top, reduce heat, cover and simmer for 30 mins or until vegetables are tender.
In crock pot, cook on low 8 hours.
Add parsley just before serving.
Makes eight 1 cup servings
