Squash casserole

Ingredients

    3 cups of sliced summer squash
    1 small sliced onion or leek
    1/2 cup of hard parmesan type cheese I use a hard goat cheese
    1/4 cup of soy milk
    earth balance buttery spread

Directions

Layer squash, onion and cheese and pats of butter, sprinkle cheese on top, poor soy milk over. Bake at 375 for 35-40 minutes.
