Summer-Busting Strawberry Frozen Yogurt

This strawberry fro-yo will cool you down without weighing you down!

NOTE: If you prefer to substitute honey for sugar, you can - 3/4 cups honey = 1 cup sugar, but the flavor will probably not be the same.

Number of Servings: 6

Ingredients

    2 cups Greek (thick) yogurt, vanilla
    10-12 medium strawberries (2/3 cup strained puree)
    1 cup sugar
    5/8 cup (5 fl. oz) water
    1/2 cup (4 fl. oz) 1% milk
    1 tsp vanilla extract
    1 tsp lemon juice

Directions

Pour water and sugar into a small to medium saucepan and bring to a boil. Let simmer until all sugar has dissolved. (DO NOT STIR! Or you will end up with rock candy on your spoon and you will have to eat it off so you can have your spoon back.) Remove from heat and let cool on stove before putting into refrigerator to cool completely.

Wash, clean and remove tops of strawberries. Puree with lemon juice, strain through a fine sieve and refrigerate.

Stir cooled puree and vanilla into simple syrup until completely mixed. Using a hand mixer (or stand mixer, if lucky enough to own one), mix yogurt on low for 30 seconds, then add strawberry syrup slowly. Mix thoroughly, add milk slowly and mix again. Pour into ice cream maker and follow manufacturer instructions; or pour 'custard' into chilled metal bowl and put into freezer, mixing with hand mixer on low every 20-30 minutes for 3-4 hours or until desired consistency is reached.

Serve immediately (if you can't wait any longer) or let flavors marry overnight. Makes 6-7 small servings.
