1.5 cups Whole Wheat Flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 cup wheat germ
3-4 medium sized bananas mashed (calculated with 4)
1/3 c. white sugar
1 TBSP Vanilla
3 egg whites, lightly beaten
3 TBSP Unsalted butter- melted
1/3 cup fat free plain yogurt
1/3 c. packed brown sugar
2 tbsp all- purpose flour
1/8 tsp ground cinnamon
1 tbsp unsalted butter
2. In large bowl, mix whole wheat flour, baking soda, baking powder, wheat germ and salt.
3.In another bowl beat together bananas, sugar, egg and melted butter, yogurt and vanilla.
4. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
3. In a small bowl, mix together brown sugar, white four and cinnamon. Mix with softened butter- I use my hands until well mixed- it should clump together and then sprinkle over muffins.
4. Bake in preheated oven 18-20 minutes, until a toothpick comes out clean.
