Introduction

whole wheat & buckwheat waffles (2 waffles per serving) whole wheat & buckwheat waffles (2 waffles per serving)

Ingredients


    -- 3 large eggs
    -- 1.5 cup skim milk
    -- 1 tsp Cinnamon, ground
    -- 1 tsp. Vanilla Extract
    -- 2 tsp Baking Powder
    -- 0.25 cup Smart Balance, Smart Balance Light Buttery Spread
    -- 1 cup buckwheat flour
    -- 1 cup whole wheat flour

Directions

mix 1 cup whole wheat flour and 1 cup buckwheat flour, 2 tsp baking powder and cinnamon in one bowl. Separate 3 eggs. Whisk whites and set aside.

Wisk 1.5 cups of milk and 0.25 cup melted light smart balance into eggs yolks. Beat egg yolk mixture into dry ingredients and then slowly fold in egg whites. Add 1 tsp cinnamon and 1 tsp vanilla.

Mix until smooth then add to preheated waffle iron. Makes approx 12 waffles (2 per serving).

  • The waffles came out very light and fluffy! I didn't have skim milk so I substituted rice milk. I used extra light olive oil in place of the Smart Balance. I think I will make these again but will add blueberries for more flavor. These waffles have a very mild flavor. - 10/21/10
