Quinoa Tabbouleh

Number of Servings: 10

Ingredients

    1 cup quinoa
    2 cups water
    Sea Salt

    1 fresh tomato, chopped
    1/2 english cucumber, chopped
    1/2 red onion, chopped
    3 green onions, chopped
    5 tbsp fresh cilantro, chopped
    5 tbsp fresh chives, chopped
    2 tbsp garlic chives, chopped

    1 tbsp lemon juice
    1 tbsp lime juice
    1 tbsp balsamic vinegar
    1 tbsp olive oil
    1 tbsp worchestire sauce
    1 tbsp red hot
    1 tbsp orange juice

Directions

Makes 10, 1/2 cup servings.

1. Remember to rise the quinoa well before using. Combine quinoa with water and salt in a medium saucepan. Bring to a boil and let simmer for 20 minutes.

2. Remove from heat. Fluff with fork. Let cool.

3. Add veggies and mix all ingredients for sauce.

4. Combine and enjoy.

  • Great recipe especially to get protein instead of carbs of the cracked wheat. I liked the cilantro, used 1/2 that and 1/2 parsley. My husband liked the heat of the hot sauce! - 2/18/09
