Homemade Egg Noodles

Introduction

I found this recipe on the Internet. It said it makes 2 servings but I fed a family of four with one batch. It is a little more work than opening a package of noodles, but they taste better. Number of Servings: 4

Ingredients

    1 cup Flour
    1 Egg
    1 pinch Salt
    2 TBS Skim Milk

Directions

Make a well in the flour and add the rest of the ingredients. (For fun colored noodles, add a couple drops of food coloring before mixing ingredients). Mix until you have a ball of sticky dough. Let rest for 10 minutes. Roll out dough on a floured surface until thin. Using a pizza cutter or sharp knife, cut noodles to desired size. Arrange on a towel to dry for at least two hours. Boil for 15 minutes to cook.
Makes four servings

  • These are a holiday trad here. I also make them w/whole wheat flour & egg beaters. They are thicker but handmade, not machine made, are. The only "recipe" any of us have ever used is 1 egg per person & wing the rest, 1/8tsp baking powder, 1/8tsp salt, no milk....excellent - 12/11/08

  • This is the first time I have made egg noodles so have nothing but store bought to compare with. I made this in my breadmachine and had to add an extra tablespoon of milk. Good flavour but the noodles where fairly thick although I rolled them as thinly as possible. - 5/19/08
