Number of Servings: 2

Ingredients

    * Pork Sausage, 1 link
    * Pasta, cooked, 4 oz
    * Peas, frozen, 0.5 cup
    * Basil, 6 tbsp
    * Olive Oil, 2 tbsp
    * Garlic, 1 clove
    * Zucchini, 1 cup, sliced
    *Pine Nuts, 1 tbsp (remove)
    *Salt, 2 dash

Directions

Set a pot of water to boil, and heat a frying pan. Fry the sausage until cooked and skin is crisp, but not burned. When the pot of water is to boil, add a pinch of salt, add the pasta and stir.

While the sausage and pasta cook, slice the zucchini and being the pesta. Slice the basil into small flecks, then chop the pine nuts and garlic. Mix together and add a pinch of salt and pepper. Add half of the oil and stir until blended.

When the sausage is done, take it out and let it rest for 5-10 minutes. While the sausage rests, drain most of the grease from the pan and add the zucchini and peas and cook until just soft.

Chop up the sausage into bite-sized pieces and drain the pasta. Add the pasta, sausage, zucchini and peas into the pot, add the pesta and the other half of the oil, and mix until combined. Serve.
