Scrambled Eggs with Ham

Introduction

This can be prepared ahead, placed in micro-wave containers and re-heated in the morning for a quick, breakfast. This can be prepared ahead, placed in micro-wave containers and re-heated in the morning for a quick, breakfast.
Number of Servings: 4

Ingredients

    .5 cups raw celery, diced
    .5 cups raw onion, chopped
    1 tbsp. buttter
    4 slices of extra lean ham
    8 extra large fresh eggs
    salt and pepper to taste

Directions

Melt butter in non-stick skillet, saute celery, onions and ham until veggies are semi-soft. Beat eggs adding salt and pepper to taste, add to ham and vegetable mixture and scramble.
Optional:
Fill whole wheat pita and/or add cheddar cheese.
Makes 4 servings.
