Pumpkin coconut soup

Ingredients

    1 kg pumpkin diced
    1 tb olive oil
    3 tb garlic
    2 onions chopped
    1 tsp cumin
    1 tsp coriander dried
    1/4 tsp cinnamon ground
    1 litre chicken stock
    1/2 cup coconute milk.

Directions

roast pumpkin for 30 mins
heat olive oil in large saucepan and add onion stirring for 4 mins, add spices and stir until fragrant. Add stock and pumpkin and simmer 15 mins. Blend or mash soup and stir in coconut milk.
