Ingredients

    1/4 cup brown rice (uncooked)
1/4 cup dried baby lima beans
    1/4 cup millet (uncooked)
    1/4 cup flax seed
    1/2 cup boiling water

Directions

Grind individually in a coffee grinder:
1/4 cup brown rice (uncooked)
1/4 cup dried baby lima beans
1/4 cup millet (uncooked)
1/4 cup flax seed

Mix dry ingredients with a fork and add:
1/2 cup boiling water

Stir until you have a stiff dough. Divide dough in 4 equal pieces. Place blob of dough in a preheated heavy skillet coated with non stick spray and press flat with spatula until it is between 1/8" and 1/4" thick. Cook until brown on one side, then flip and cook the other side.

You can top with jam, serve with soup, or make an open face sandwich. Tastes wonderful with hummus!
