IntroductionThis is a healthy and hearty breakfast that I love on the weekends. If you are trying to get away from eggs, but miss them, this is a good alternative. This is a healthy and hearty breakfast that I love on the weekends. If you are trying to get away from eggs, but miss them, this is a good alternative.
Olive Oil, 1 tbsp
Onions, raw, .25 cup, chopped
Garlic, 3 cloves
Zucchini, .5 cup, sliced
Spinach, fresh, .5 cup
Kale, .5 cup, chopped
*Peppers, sweet, red, fresh, .5 cup, chopped
Tofu, firm, 6 oz
Heat the oil in a pan. Add onions and garlic and sautee until soft. Add zucchini, peppers, and kale and sautee about 2 minutes. Add tofu and crumble in pan. Add any spices you like (I like to eyeball salt, pepper, oregano, cumin, chili powder, and chili flakes). Sauteee all ingredients until tofu is hot. Add spinach and continue sauteeing until just wilted.
Top with Tofutti Sour Cream for extra indulgence if you wish. (Not included in nutrition info.)
