Crustless Spinach, Onion and Feta Quiche

Introduction

Technically this is a crustless quiche, but the addition of flour makes for a delicious crusty bottom and sides. Technically this is a crustless quiche, but the addition of flour makes for a delicious crusty bottom and sides.
Number of Servings: 6

Ingredients

    1 medium onion, diced
    6 ounces Fresh Express Baby Spinach
    2 large eggs
    1/2 cup egg beaters (liquid substitute)
    1/2 cup all purpose flour
    1/2 tsp baking powder
    pinch cayenne pepper
    1 1/3 cups non fat milk
    1/2 cup feta cheese

Directions

Preheat oven to 400F.
Lightly grease a 10-inch quiche/tart pan (or a pie plate)
In a medium frying pan, cook diced onion with a bit of vegetable oil (or cooking spray) over medium-high heat until translucent and tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes
In a large mixing bowl, whisk together eggs, flour, and baking powder. Whisk in milk, then stir in spinach-onion mixture.
Pour quiche base into prepared pan. Top with feta cheese.
Bake for 25 minutes, or until center is set and the outside edge is golden brown.
Let set for 5 minutes, then slice and serve.

    I found this recipe the other day and tried it but instead of making it in a pie plate I made it in muffin tins. It is a great size, I froze the leftovers and just grab and go by lunch they are thawed and make a great tasty lunch. Thanks for sharing. - 1/14/10

    Easy and yummy dish! I used 2 eggs and 4 egg whites as well as shredded cheddar and mozzarella cheese instead of feta -- looking forward to trying it with feta. Also, would add a little spice to it in the future. Maybe sautee some garlic along with the onion. - 10/7/08

    We really enjoyed this dish. Plan to try a few variations by adding some mushrooms and perhaps spicing it up a bit with some fresh herbs. Some dill would be nice to add. Perhaps some thinly sliced tomato would add flavor with the feta. - 7/16/08

    Absolutely delicious and so easy to make. I used 4 eggs as we don't have Egg Beaters here in the UK and used reduced fat feta. As others have already commented it is a great recipe to use as a base for any type of quiche. I think this will become a staple recipe for me. Thanks for sharing! - 6/28/09

    Very good. I make it very often using just the frying pan to cook it. After I put the egg mixture over spinach mixture, I cook it over stove and then I put the frying pan into the mini oven to broil it till the top is golden. - 8/28/09

    This was pretty easy to make. I didnt have feta cheese so used a mexican cheese called Fresco. We are experimenting with different cheeses in the house.     Very nice, very easy recipe. It would be amazing with sharp cheddar and a bit of fat free ham. And mushrooms. And cherry tomatoes on top. Ok, yeah. That was my variation. And it was dinner. I also put a liberal sprinkling of Mrs. Dash's Extra Spicy seasoning in the mix. Yum! - 8/31/09

    I used all egg whites. If you do the same, cook for 40 minutes and don't top with cheese until roughly halfway through cooking. Otherwise the cheese gets waaaaaay too brown. I also added mushrooms and garlic powder to mine. It was excellent. - 1/17/10

    I added a red pepper and maybe should have cut back on the milk to make up for the extra moisture in the peppers. Anyway, it was delicious. I am glad that it was so low calorie because I loved it so much that I had a double serving. That's a huge amount of good food for 284 calories. - 10/16/09

    Excellent recipe. I added mushrooms and used a blend of feta and Swiss cheese, at least a cup in total. Found that the crust was not crusty-more pasty than anything. Will likely try using Bisquick the next time I make this . I also use Red Pepper and garlic spice. Used 4 eggs rather than the combo. - 7/30/09

    I made a crustless quiche with egg whites, greek yogurt, and cottage cheese. It was fantastic and actually good for you too! If it seems a bit soft but seems done let it sit on the stove for 15 minute before cutting. - 1/12/10

    This was pretty good. It did form a crust of sorts. I added a little garlic and used the whole 6 ounces of Feta Cheese, which was a little more than the recipe called for and I mixed it in, instead of just on top. I'm hoping to freeze half. - 1/21/09

    This is great. I used half the feta and added 1/4 cup of mozzarella and added some diced tomatoes. I also used 1/2 cup of egg whites instead of egg beaters and had to cook it an extra 10 minutes. It could use a little more of a kick to it - I'll try some garlic in it next time. - 9/2/09
