Ingredients

2.5 L water
2 tbsp Olive Oil
Onions, raw, 1 medium
Garlic, 3 cloves
Celery, raw, 3 stalk, small (5" long)
Carrots, raw, 4 small (5-1/2" long)
Mushrooms, fresh, 2 cup, chopped
Soy sauce (tamari), 1.5 tbsp
Freshly ground pepper, to taste
Spinach 4. cups fresh
Spinach Lasagna Noodles, 375 grams
Tomato Sauce, 2 cup
Cottage Cheese, 1% Milkfat, 2.5 cup
Mozzarella Cheese, part skim milk, 5.9 grams
Goat Cheese, Soft, 300 grams
Directions
1. Preheat oven to 375. In large skillet heat olive oil over medium heat. Add onion, garlic, carrots and celery. Cook 5 minutes or until tender. Add mushrooms and saute another 5 minutes. Stir in tamari, pepper and spinach. Let spinach wilt.
2. In a large saucepan bring 2.5 L water to a rolling boil. Poor in olive oil. Add noodles (follow directions on box. Drain, and run under cold water.
3. Layer sauce, noodles, cheese, and veggies and repeat. End with sauce.
4. Cook for 35 minutes. Layer with leftover mozz, and bake for 5 more mins. Then take out and let set for 20 minutes. Do not skip this step.
