Lighter, No-Mayo Potato Salad

Introduction

Number of Servings: 6

Ingredients

    1 lb potatoes, chopped
    2 tbsp creme fraiche
    2 tsp grainy mustard (Dijon or brown)
    1 green onion, chopped fine

    parsley and/or dill, chopped, to taste
    salt and pepper

Directions

Boil potatoes for 8-10 minutes or until just fork-tender, drain, rinse and let cool. Whisk mustard and creme fraiche together in a large bowl, add cooled potatoes and herbs and toss together carefully to incorporate. Salt and pepper to taste. Serves 6.
