Ingredients

    1 - 10 oz. package frozen peas & carrots
    1 - large potato, diced
    1 - boneless, skinless chicken breast, diced

Directions

dice potato and chicken into small pieces.

mix veggies (still frozen), potato and chicken in 9" x 9" baking dish. toss in spices/herbs of choice for flavor.

bake 45-60 minutes (until potatoes and chicken are both done) at 350 degrees.

makes two large servings.
