Susan's Potato Salad

Number of Servings: 8

Ingredients

    4 medium potatoes, diced cooked
    1 medium onion diced
    1/2 c. diced cucumber
    1/2 c. diced radishes
    1 c. diced celery
    2 medium eggs, boiled and chopped
    Dressing:
    1/2 c. Hellman's Canola Mayonnaise
    1/2 c. f/f plain yogurt, (whey drained thru a coffee filter to make to make 1/4 c. yogurt cheese)
    1 T. dry mustard
    2 T. vinegar
    1/2 t. black pepper
    1 t. salt

Directions

Mix dressing ingredients together. Pour over chopped veggies. Chill and serve. Makes 10 3/4 cup servings.
