Ingredients

    1 c dry bulgur
    1/2 c dried sweetened cranberries
    1 c boiling water
    1/2 c chopped parsley
    1/4 c lemon juice
    2 T walnuts, toasted and chopped
    1.5 Canola oil (originally walnut oil, which would be nice!)
    Serving size =2/3 cup

Directions

Pour boiling water over bulgur and cranberries. Wait about 15 minutes.
Then add the rest of the ingredients.
Wait another 15-30 minutes for the flavors to get acquainted.
Serving is 2/3 cup.
Lasts for up to a week in the refrigerator.
