Chicken Divan Casserole

Number of Servings: 10

Ingredients

    4 cups Cooked Chicken Breast, cut into bite-size pieces
    2 16-oz bags Chopped Broccoli, thawed
    1 cup shredded Cheddar Cheese
    1-3/4 cups Nonfat Milk
    1 can 98% Fat Free Cream of Mushroom Soup
    1 tsp Lemon Juice
    1/4 tsp Salt
    1/4 tsp Pepper
    3 Tbs Flour
    3 Tbs Water
    3/4 cup seasoned Bread Crumbs
    1 Tbs Margarine, melted

Directions

1. Preheat oven to 350 degrees
2. Spray a 9 x 13 baking dish with nonfat cooking spray.
3. Pour chopped broccoli into the baking dish and spread out evenly.
4. Next, add spread the chicken out evenly over the broccoli.
5. Sprinkle the cheese on top of the chicken.
6. In a sauce pan, mix together the milk, cream of mushroom soup, lemon juice, salt and pepper over medium heat.
7. Combine flour and water in a small bowl and mix in with soup mixture.
8. Bring to a boil, stirring constantly with a whisk until sauce is thick and bubbly.
9. Pour sauce evenly over chicken, broccoli and cheese.
10. Combine melted butter and bread crumbs, and sprinkle over top of sauce mixture.
11. Cover and bake for 20 minutes. Then uncover and bake for another 15 minutes or until heated through. Let stand 10 minutes before serving.
12. Enjoy!

Makes about 10 servings (a little over 3/4 cup each)
