Chicken with Vegtables and Brown RiceSubmitted by: BUTBYGRACE
IntroductionThis is a recipe my husband introduced me to. This is a recipe my husband introduced me to.
1 lb chicken breasts, cut into strips
1/2 cup sliced canned mushrooms, drained
1/2 cup fat free Italian salad dressing
1/4 cup chopped onion
2 tablespoons low fat margarine
1 medium zucchini, sliced (2 cups)
1 large tomato, cut into wedges (remove seeds)
1-1/2 cups of shredded cheese
While chicken is marinading, cut up vegetables (keeping them separate) and set aside.
When chicken has marinaded, drain excess dressing and set aside.
In a large skillet, saute onion in margarine.
Add in chicken and mushrooms.
Cook over medium heat until chicken is tender.
Add zucchini, tomatoes, and reserve marinade.
Cook until zucchini is tender.
While dish is cooking; begin making instant brown rice per directions on the box using 1 cup of rice.
Once zucchini is done, remove from heat, sprinkle with cheese, and cover.
Let stand for 2 minutes or until cheese has melted.
This dish serves 4 with the following:
1/2 cup of cooked brown rice
1 cup of chicken and vegetables.
