Chow Mein 'n Noodles

Introduction

This is a great way to get in your vegetables, even for people who don't like them. This is a modified version of a recipe I found in a book called Set For Life. Ingredients

    2 boneless, skinless chicken breasts
    1 tbls lite soy sauce
    1 tbls water
    1/4 tsp garlic powder
    1 tsp canola oil
    1 tsp cornstarch
    2 packages chicken flavored Ramen Noodles
    1/2 cup chicken broth or water
    1 medium onion, sliced
    1/2 medium head of cabbage, shredded
    2 medium carrots, julienne cut
    3 large stalks celery, diagonally sliced
    2 cups fresh mushrooms
    1/2 can sliced water chestnuts

Directions

Cut chicken into very thin strips. Mix soy sauce, water, garlic powder, oil and cornstarch. Marinate meat in the sauce. Cover ramen noodles with very hot water. Let sit a few minutes. Drain and set aside. Heat wok or frying pan to very hot. Add chicken broth or water. Add meat, and stir-fry until meat loses its color, about 2 minutes. Add onions, and stir-fry 1 minute. Add remaining vegetables, and stir-fry about 4 minutes, until cabbage begins to look clear. Add noodles, and stir. Add flavor packets from ramen noodles. Toss. Serve immediately
