Introduction

Number of Servings: 6

Ingredients

    3 cups cooked brown rice
    6 slices turkey bacon, chopped
    1 small onion, chopped
    2 stalks celery, chopped
    1 cup frozen peas and carrots
    2 tbls lite soy sauce
    2 large eggs

Directions

Cook bacon. Add vegetables. Cook until onion looks clear. Add rice, soy sauce, and eggs. Stir, and cook until eggs are completely mixed in, and cooked. Serves 6.
