Eggplant Vegetable Medley

Ingredients

1 unpeeled eggplant, sliced
1 large sweet red pepper, sliced into 1" strips
1 medium onion (your preference)
1 large red ripe tomato
1-2 cups of mushrooms, whole or sliced (may substitute 4 portabello mushroom caps, sliced)
3 cloves of garlic, finely chopped
1 tsp sea salt
fresh ground black pepper to taste
2 tbsp. olive oil
Directions
saute garlic and onion over medium heat, being careful not to scorch garlic, until tender, add remaining vegetables and saute until desired tenderness (5-15 minutes.) season with sea salt and pepper.
