Chicken Rice Quesedilla

Number of Servings: 2

Ingredients

    1 boneless, skinless, chicken breast, cubed
    1 tsp cumin
    1/2 cup cooked brown rice
    1/4 cup salsa
    1 oz. mozzarella cheese, finely grated
    2 La Banderita Soft Taco Wheat Tortillas

Directions

Heat non-stick skillet on medium-high heat, add chicken. Sprinkle cumin over chicken. Cook until chicken is completely cooked. Mix in salsa and rice. In separate non-stick skillet place 1 tortilla. Spread half of chicken mixture over half the torilla, sprinkle with cheese, then fold tortilla in half. Place lid on skillet, and let cook on medium-high heat until bottom of tortilla is browned. Flip, then brown other side. Repeat for second tortilla.
May be served with lettuce and sour cream on top. Serves 2.
