Southwest Chicken

Ingredients

    2 full bonless skinless chicken breast or 4 halves

    1 Bell Pepper

    1 large Sweet Onion

    1 tbls chopped garlic

    3 tbls olive oil

    4 Slices pepper jack cheese

Directions

Start by cutting the pepper and onion into strips and cook until tender then set aside, in same pan brown chicken in olive oil and garlic, transfer the chicken to casserole dish cover with the onions and bell pepper then cook for about 30 minutes at 350 then add the cheese on top cook for an additional 15 minute until cheese is melted and internal temp is at least 165 degrees.
