Introduction

This recipe is an easy to make at home egg and English muffin taste treat. Add a slice of low cal Canadian bacon and a slice of fat free cheddar if you please and you'll start the day off right. Ingredients

    1 Thomas' English Muffin
    1 1/2 cup Egg Beaters liquid egg substitute
    Wesson No Stick Cooking Spray - Non-Aerosol Pump
    1 slice Canadian bacon
    I slice fat free cheddar cheese
    1 tsp Grey Poupon dijon mustard
    Dash of black pepper (to taste)

Directions

Split and toast the English muffin. While the English muffin is toasting, spritz a small bowl with 2 sprays of No Stick cooking spray; pour the egg beaters into the bowl and cook in the microwave, covered, until done in the center. When eggs finish cooking immediately place them on the toasted split English Muffin and top with a slice of Canadian bacon and fat free cheddar cheese and grey poupon dijon mustard, add black pepper to taste.
