Light&Easy English Muffin Pizzas

Introduction

These tasty pizzas are great for whenever you have the craving. They make a nice, light meal and a tasty snack. They are also especially good for those using dietary/diabetic exchanges. These tasty pizzas are great for whenever you have the craving. They make a nice, light meal and a tasty snack. They are also especially good for those using dietary/diabetic exchanges.
Number of Servings: 1

Ingredients

    One Thomas' 100 Calorie English Muffin (both halves)
    Around four teaspoons of pizza sauce*
    One ounce of part-skim mozzarella cheese*
    Pam Cooking Spray (Suggested: Olive Oil)


    Nice addition!
    If you'd like to make your pizzas even better, sprinkle on some of Mrs. Dash Tomato Basil seasoning. Even just a little bit goes a long way!

    *-More can be used if desired, however it will affect the nutritional values of the food.

    Exchange: 1 Bread, 1 Meat

Directions

Preheat the oven to 400°.

(Using a baking pan is recommended, but a cookie sheet may also be used.
For little-to-no cleanup, line the pan with aluminum foil and spray it with the cooking spray.)

First, open or cut the muffin so that the halves are separated. Lay them on the foil with the insides facing up. Pour the sauce on both, spreading it around with a spoon. If you would like to add any seasonings, do so now. Evenly cover both halves with the cheese. Put the pan into the oven and cook for ten minutes. Enjoy. :]

Makes two mini pizzas.

  • This was so simple and such an easy starter recipe, I couldn't believe it! My husband LOVED them! We did some things differently though and I recalculated accordingly - added 93/7 Honeysuckle ground turkey, chopped up an onion, and low sodium pepperoni for the hubbs. Will definitely make again! - 12/16/10

  • I tried this, its really good. But I did a few things different

    half of thomas whole grain english muffin
    mushroom spegetti sauce
    no-fat mozzarella cheese
    Pop in toaster oven till cheese is melted :) - 10/15/08
