Quick Vegetarian Borscht

Introduction

Nothing is better than a delicious bowl of slow-cooked Russian beet soup... but this can be made in 15 mins and hits the spot! Carrots or other vegetable can be added if you like. Ingredients

    2 Cans Sliced Beets, juices included
    2 Cans Reduced-Sodium Vegetable Broth (4 cups)
    1 cup chopped onions
    1 cup shredded cabbage
    Lemon Juice, one lemon or 2 tbsp
    salt
    pepper
    Low Fat Sour Cream, to serve

Directions

Add beets with juice, broth, onions, and cabbage to a large stock pot. Bring to a boil. Lower heat and simmer for 10-15 mins (onions and cabbage should be tender). Remove from heat. Add lemon juice, salt and pepper to taste. Serve with a dollop of low fat sour cream and enjoy!
