Ground Beef Stroganoff

Submitted by: GIBBYSGAL

Introduction

This is my variation of a recipe on here by Mariesansom. You can omit the beef stock if you wish, I just happened to have some open in my fridge. If you don't have beef stock, you can always use beef broth or bouillion. If you use the bouillion, cut down on the soy sauce or it will be too salty. Ingredients

    1/2 lb. ground beef
    1 tbsp. dried parsley
1.5 tbsp. dried chopped onion, divided
    2 tsp soy sauce, divided
    2 tsp garlic powder, divided
1 can Campbells Healthy Request Cream of Mushroom Soup
1/2 cup Fat Free Sour Cream
    1 Tbsp. Beef Stock
2 cups frozen french cut green beans
    black pepper to taste

Directions

In a mixing bowl, add beef, parsley, 1/2 tbsp onion, 1 tsp soy sauce, 1 tsp garlic powder and combine. Form into small (quarter size) meatballs. Heat large skillet over medium low heat. Add meatballs and cook until just a little pink in the center. Remove from pan and place on paper towel to drain.

Wipe pan with clean paper towel and return to stovetop. Add soup, sour cream, beef stock (if using), black pepper, and remaining chopped onion, soy sauce, and garlic powder. Whisk together until combined. Let cook for 3 minutes and return meatballs to pan. Add frozen green beans. Cover and allow to simmer for 15 minutes or until green beans are cooked.

Serve over noodles or rice.
