2 cups of cooked rice or noodles
3/4 lbs. Flank steak
2 tsp chili powder
1 tsp ground cumin
1/4 tsp salt
1 (16 oz) pkg. frozen pepper stir fry vegetables
1 (14 oz) can Mexican style tomatoes
2. coat large non-stick skillet with cooking spray. place over med. heat until hot. Add pepper stir fry. Stir fry 2 minutes or until just tender. Add tomatoes. Bring to a boil. Cook 2 minutes, stirring occasionally.
3. Add meat to this mixture to reheat.
4. serve over 1/2 cup serving of rice
makes 4 servings.
