1 1/2 lbs of scallops or about 16
2 medium zucchini, sliced lengthwise in thin slivers, about the size of a piece of bacon.
2 TB orange juice
1 TB Olive Oil
1 tsp Caribbean Jerk seasoning
1 tsp grated orange zest
1/8 tsp red pepper flakes
Cut zucchini is strips the size of bacon slices.
wrap a zucchini strip around each scallop. Secure 4 scallop/zucchini to a skewer. You can add onions or bell peppers or mushrooms to your Kabobs too!
Coat grill rack with cooking spray. Grill over medim heat for 3-4 minutes on each side.
