Chicken Chili - Take One

Introduction

Trying to make some good chili and make it lean and healthy. Trying to make some good chili and make it lean and healthy.
Number of Servings: 12

Ingredients

    1 Tbsp Olive Oil
    150g Onion
    200g Bell Peppers (mix colors for fun and flavor)
    300g Chicken
    1/4 tsp garlic powder
    1/3 cup chili powder
    2 28oz cans Diced Tomatoes
    28oz can Pinto Beans (drained)
    2 15oz cans Chili Beans

Directions

Chop onions, peppers, and chicken. Heat oil in pan and cook onions, peppers and chicken 10 minutes until veggies are tender and chicken is mostly cooked on the outside, stirring to prevent sticking.

Mix in garlic, chili powder, and tomatoes. Bring to a boil, cover, and simmer 1.5 hours to allow flavors to blend. Add beans and heat through.

Goes well on brown rice, white rice, crackers, etc.
