Roast Potato Quiche Casserole

Ingredients

    4 small or 2 large potatoes
    1 tbs dried minced onion
    1/2 tsp garlic powder
    1/8 tsp black pepper
    Cooking Spray
    4 large eggs
    1 cup skim milk
    4 tbs reduced fat sour cream
    1 cup low fat cheddar cheese
    1 tsp paprika

Directions

1. Slice potatoes thinly lengthwise. Cut each slice into strips.

2. Spray bottom of 13X9X2 inch baking dish with cooking spray. Arrange potato strips in dish. Sprinkle with onion, garlic, and black pepper. Spray again with cooking spray.

3. Bake at 400 degrees 20 minutes, until potatoes are tender.

4. Meanwhile, beat eggs, milk, sour cream, and paprika together until frothy. Stir in cheddar.

5. Pour egg mixture over potatoes, stirring to coat. Bake an additional 20-30 minutes, until knife inserted in center comes out clean.

Cut into 8 servings.
