Chicken & Jalapenos Soup

Introduction

If you like jalapenos, you may enjoy this dish. There are lots of ways you can vary the ingredients and you can increase the "heat' of the soup by leaving the seeds in, adding more jalapenos or other peppers or sauces.

I cooked a recipe this evening for a family get together on the weekend, including our Granddaughter(age 12 months). For this recipe, I cooked everything, minus the jalapenos and crushed garlic. Pulled off a pint for her, added the jalapenos, crushed garlic and finished cooking.

The recipe makes about 4.5 quarts or 18 cups/servings. No salt was added.

Ingredients

    .25 pound diced bacon
    3 large chicken breat, without skin (4 cups)
    4 cups of raw onios, diced
    30 ounces of canned chicken broth
    4 cups of water
    2 cups of dark red kidney beans
    4.25 cups (28 oz can) of crushed tomatoes
    ,1875 (3 tablespoon) of pot barley
    1.33 cup (7 large) jalapenos (with or without seed)
    4 cups of celery, diced
    7.5 teaspoon of crushed garlic
    3 bay leaves

Directions

In a large soup pot, brown the bacon. Remove the bacon, add and brown the diced chicken, Add onions and cook for about 4 minutes, stirring often. Add the beef broth and water. bring to a boil and add all other ingerdients, including the cooked bacon. Bring to a boil again and then lower to simmer for about 1/2 hour. Stir often.
