3 Low Carb Tortillas
3/4 c. Part Skim Milk Mozzarella Cheese, Shredded
15 Jumbo Black Olives, Sliced
1 7 oz. can sliced mushrooms, drained
3 c. fresh baby spinace
3 t. garlic, minced
1/4 c. tomato puree
1 T. Extra Virgin Olive Oil
Place tortillas on non stick baking sheet. Brush with olive oil and divide tomato puree evenly between the three, using the back of a spoon to spread as close to the edges as possible.
Divide the Spinach mixture evenly between the three tortillas, top with shredded cheese and bake in 400 degree oven for 10 minutes or until cheese is bubbly and golden brown. Serves 3.
